Ehime’s Prefectural Fish – Sea Bream (Madai)
Madai (red sea bream) is known as the prefectural fish of Ehime and one of the most representative fish of the Seto Inland Sea.
The strong tidal currents around the Shimanami area produce sea bream with firm texture and refined flavor.
At Hotel Kikusui Imabari, we prepare this prized fish in dishes such as braised sea bream head and sea bream rice cooked in an iron pot, highlighting the natural taste of the ingredient.

A signature kaiseki course featuring the flavors of the Seto Inland Sea.
Enjoy Ehime’s famous sea bream prepared as braised head and rice cooked in a pot, along with seasonal sashimi, jumbo shrimp, and domestic beef.
Dinner:Hana Course

A more varied kaiseki course highlighting the bounty of the Seto Inland Sea.
Enjoy grilled sea bream head, sea bream rice, three kinds of sashimi, and tempura of small pufferfish.
Dinner:Sazae Kaiseki Course
Sazae Kaiseki Course
A kaiseki course centered on large turban shells from Miyakubo, served as sashimi and grilled in the shell.
The course also includes braised sea bream head, sea bream rice, and Imabari’s local specialty “Senzanki” fried chicken.

A luxurious kaiseki course featuring abalone sashimi and large turban shells from Miyakubo.
